Delicious Taco Night Inspiration + Recipe Links
I was cleaning up my pictures when I came across all these vibrant colors! I had completely forgotten about this delicious taco meal. It was a meal we made early into quarantine and the social distancing measures. It was a super indulgent meal, made during a time that we didn’t think would last long so we really went into taco night.

The Full Taco Night Spread
There is nothing more delicious than a full taco night spread, especially during a once-in-a-lifetime pandemic. Homemade tortillas. Pico de gallo. Guacamole. Meat that falls off the bone. This was a meal that took almost a full day of prep. But it was definitely worth it in the end.

I’m excited that we will soon be recreating a small part of this meal, my all-time favorite part of any taco night: how to make guacamole!
For Hispanic Heritage Month, I will be recording a video about how to make guacamole for older children and their parents for my library. I will also be making a video about creating homemade tortillas, even if you don’t have your own tortilla press!
I might try to add some history in there about the dish and its ingredients. After all, a dish doesn’t just spring out of nowhere; it tends to be born from aspects of a culture and its history. However, it’ll depend on the parameters for length of video set by the library.
Quarantine has been giving us quite a bit of extra time…and we’ve spent that time as wisely as we could: by making indulgent foods and margaritas! What have been your favorite drinks during this pandemic?
